Lectin-Free Warm Vegetables (Quick Version)

A quick and easy, nutrient-packed dish perfect for a healthy, lectin-free diet. Packed with vitamins, minerals, fiber, protein, and good fats, this recipe is ideal for anyone looking for a light, satisfying meal with minimal prep time.

Ingredients
Carrots, onions, cabbage
Frozen broccoli, okra, and optional frozen spinach
Canned sardines, mackerel, herring, boiled chicken breast, or boiled chicken tenderloin, boiled eggs (choose one protein source to your liking)
Optional: Goat cheese for topping

Instructions

  1. Cut the carrots, onions, and cabbage into your preferred sizes.
  2. Using a microwave steamer, steam the carrots and onions in that order. Steam the carrots for about 6 minutes, then the onions for about 10 minutes.
  3. Defrost the frozen vegetables in the microwave.
  4. Once all vegetables are steamed or defrosted, place them in a large Ziploc container, layering them, and add dried basil and sanbaizu (as explained here: Sanbaizu Recipe).
  5. Choose one protein source from the following options: canned sardines, mackerel, herring, boiled chicken breast, or boiled chicken tenderloin, and add boiled eggs if preferred.
  6. Just before serving, sprinkle black pepper or ground sesame seeds, drizzle extra virgin olive oil, and mix thoroughly.
  7. For an extra boost of nutrition and indulgence, top with goat cheese, which is a lectin-free dairy product.
